Recipe: gnocchi of Farini
- 1 kg Farini potatoes
- 1 hg flour
- 2 egg yolks
- 1 pinch salt
- 1 spoonful oil
Boil and mash the potatoes, add the flour and the other ingredients and work the dough until they have all been absorbed.
Form cylindrical strips 1.5 cm in diameter, cut them into stubs 2 cm long and rub these along the back of a fork to give them the characteristic ridges.
Cook the gnocchi in abundant salted water, drain them and dress them with a mushroom sauce. Serve hot, scattered with grated cheese.
