Recipe: Polenta with Farini potatoes
Ingredients:
- 3 litres water
- 700 grams white potatoes
- 2 spoons coarse salt
- 700 grams cornflour
- 100 grams white flour
- 3 spoons oil
Boil the peeled potatoes in the salted water. Once they are cooked, mash the potatoes in the cooking water. Add both the flours and mix them in, then cook for about another hour, adding hot water if necessary.
Add the three spoonfuls of oil, cook for a further 10 minutes and add a sauce or flavouring as desired.
Once cooked, the polenta should be emptied out on to the traditional wooden board and cut with a thread.
